Qdoba Mexican Grill is coming to Manhattan at 320 N 3rd St., the former home of the now-closed Anytime Fitness.
Chuck Stratman, executive director of Z-Topeka LLC, which will operate the restaurant, said Sept. 29 is the goal for opening Qdoba, but it could change.
“With all the construction and potential delays, we’re looking at the end of September and first of October,” he said.
Stratman said Manhattan is a nice addition to the company’s two other Qdoba restaurants in Topeka and Junction City.
“We’ve always thought Manhattan would be a great location,” he said. “We’ve been looking for the right place.”
Stratman said the company has looked at various areas in Manhattan for the past couple of years but didn’t find the right spot until now.
“A lot of it had to do with it not being close enough to the daytime population,” he said of the other places.
Stratman attended Kansas State University from 1979 to 1983, leaving to become an Air Force pilot before graduating.
“I loved the town, and I always wanted to get back in Manhattan,” he said.
